When shopping, select cucumbers that are slender, firm, and dark green, avoiding those that are withered & shriveled. Store fresh, unpeeled cucumbers in the refrigerator in the crisper or a plastic bag for up to 1 week. Peeled cucumbers should be wrapped in plastic, refrigerated, and used within two days.
INGREDIENTS:
- ½ large cucumber
- 2 tomatoes
- ¼ small red onion
- Small bunch of cilantro
- 4 tsp lime juice
- 1 tsp salt
PROCESS:
- Dice cucumber, tomatoes, and red onion. Combine in a medium bowl.
- Mince cilantro. Add to bowl.
- Add lime juice and salt. Stir to combine all ingredients.
- Serve with tortilla chips.
