Looking for something refreshing to eat and easy to make on these hot, humid days? Versatile and healthy, Cucumber Salad makes a terrific snack, appetizer, or side dish. You can eat it with tortilla chips, on top of tacos, or all on its own as a salad. Simply chop, chill & serve.

When shopping, select cucumbers that are slender, firm, and dark green, avoiding those that are withered & shriveled. Store fresh, unpeeled cucumbers in the refrigerator in the crisper or a plastic bag for up to 1 week. Peeled cucumbers should be wrapped in plastic, refrigerated, and used within two days.


INGREDIENTS:

  • ½ large cucumber
  • 2 tomatoes
  • ¼ small red onion
  • Small bunch of cilantro
  • 4 tsp lime juice
  • 1 tsp salt

PROCESS:

  1. Dice cucumber, tomatoes, and red onion. Combine in a medium bowl.
  2. Mince cilantro. Add to bowl.
  3. Add lime juice and salt. Stir to combine all ingredients.
  4. Serve with tortilla chips.
